Pasta sauce

Time to prep another batch of pasta sauce for Iggy (and maybe the family). My sauce is thick coz I use the whole tomatoes flesh, but I keep the juice separately just to thin out the sauce when cooking. I know some people say should pour everything in when making sauce but my can of tomato is 2.5kg, how much should I pour? And it seems that the liquid usually weighs more than the flesh, so wouldn’t that make my sauce very watery? 

While cooling down the sauce in a bigger pot with two fans, messaged bro to drop by my place to pick up. I couldn’t go over coz I had to bring the car over to che-che, can’t make it in time to go two places. 

Came back home by bus after dropping the car at her workplace, and bottled the sauce. They will return it back to me after that so I can pass it to them again. Haha! 

800g tomatoes but only 798g here 🤣. Lost 2g in between Ms Thermie’s blade, spoon and my fingers. 🤭

Not related to pasta making but just for laughs. Have to do registration first and didn’t know what to write for the Invitation. 

 

Honestly I don’t know how many times of pasta can Iggy eat with this supposedly 800g of pasta sauce. In my household, coz it’s only lil’ one who likes tomato based pasta so she can eat her pasta 4 times. Anyway she doesn’t have a choice coz I was the one who block freeze and packed the sauce for her. 

Next project - truffle carbonara. I need to be fair to che-che prepare something she likes.

She likes this truffle carbonara which is a hit and miss in Meidi-ya of late. I’d like to make one from our home kitchen without all the emulsifiers, flavourings and dunno what E E E.

Che-che loves her ramen

Lil’ one loves her soba

Then throwback to the time I went to a place where they serve the freshest soba with all the good water they so claimed. Recorded with their permission, only in restaurants they serve nice nice. Aricia, be thankful that your mummy didn't serve your soba from the pot.

With the bestest soba. I'm not a soba fan but this is really very very nice. Lil' one will love this for sure.

Needless to say, I bought a few packs of fresher soba home for her.

I love this small town I went to. Really quiet, friendly people.

After that need to pour the sobayu into the tsuyu to drink. But I couldn't drink all coz I had greedily ordered a soba ice-cream too 😂.

With the fresh soba at home, I was able to introduce her sobayu. The usual packed dried soba we buy doesn't have any nutrients coming out in the water.

She bugged che-che to buy her a present 2 months in advance. And she chose a loom set. (Huh? Hv the kit already..)

She slowly picked up looming. Put one rubber band, talk 5 sentences, loop one time, talk again, loop the other side, talk I-lost-count-number-of-sentences.

Finish one, show off and talk again. Haiz! At the rate she's going she talks more than she looms. My eyeballs just roll when she goes about doing that.

Her first loom after xxx minutes. Oops! My eyeballs dropped from eye socket liao!

Bumped into Che-Che's good friend's mom in the morning. Asked if her dau is looking forward to tmrw's NE Show. Her reply is "no, but it seems like she's looking forward to snacking there." Haha! My girl also made me buy snacks, looks like a few of them are buying to share. Hmm.... Things they'll do together.

Bakes

Opera slice cake class on 25th July. Time away from the kids.

Chef dismantling my cake, which was a little hard coz' my one is very tall (if only I'm tall too!). Packed and ... can't wait to show it to the kids. Just nice, today's 25th - can celebrate che-che turning 7 yrs 8 mths ( we haven't done this for quite some time already).

I put alot of buttercreaM and chocolate ganache.

Hahaha! Actually I'm still not that good in coating buttercream.

My cake tak balance - got white got brown. Haha!

Apparently the cake was slanted during the transportation home. Sigh…... otherwise the cake is shiok-li-cious!!

(greedy lor! put so much ganache until can slip - hahaha! Actually put on carseat so slanted lah!)

Just because I bought green apple to make rojak, I end up having to deal with the remaining apples. So i decided to make my fav fruit combo (green apple, carrot and starfruit) i usually drink from drink stalls.

And now that I bought carrots and starfruit, I think | will have to drink that tomorrow and maybe the next day.

Usually for my viva juicer, I cut more than 3 apples and 2 star fruits. But I forgot this doesn't extract the fiber so ...

I end up with a huge batch of "I still can see unchopped carrots 🤣 fruit juice.

Haha! My agar-ration is wrong.

This cup and the metal huge cup. I'm so full now 🤣. And then I wonder why I need to make trouble for self to cut, to soak in salt water, blend and then I need to wash Ms Thermie when I can just munch the fruits and 🥕 like that.

Need to munch 3x, mouth will be tired, ok I'm convinced blending them is easier

Very interesting to watch these videos.

Something abt the amt of clothings for a 7 day trip....eh..... they'll be shocked if they see what | pack for a 18-19 days trip.

Haughed when it came to the part where customs sneak check luggages, if they ever open ours they'll be shock to see the amount of snacks. Can't remember which flight but the girls were carrying lots of gummies (maybe it was Japan?) in their haversack and once from Germany where Aricia Ting haversack was filled with her fav Haribo. The security person just burst out laughing. One toy and many many Haribosssssss.

Oh my! Che-che will miss school on Wednesday. She has been looking forward to her Learning Journey.

Double heartbreak! The girls already had to miss a friend's birthday party this afternoon.

Packing sauce

The other time (when I made pasta sauce) I just sealed up the bag and I spent another day cutting up the bag, rebag and re-vacumn seal. Somehow I didn’t take note the number of bags I initially sealed, months later I found one pack dropped in between the meats there’s freeze burn on it 🤣. So yah still struggling to find ways to vacumn seal or I can simple just use ziploc bags and …maybe another struggle somehow …coz I’m quite dumb doing all these 😬. 

But I love how neat the blocks look when I did the soupe a l'oignon gratinée so used the molds. Just giving myself additional work only 😬. I couldn’t wait to see how the packing will turn out, will it be as messy as before? 

I can only pack one mold, the pasta sauce in the bottom mold (in the freezer) wasn’t frozen at all. 

Didn’t melt as fast as before coz the weather is cooling today 🌧️ + only one mistake made as I put in the smaller bag. It was dirty at the top of the bag. Once I knew which bag to use, the bigger 25cm x 20cm bag, packing was easy and fast. A teeny weeny bit of water was sucked into the machine 🤭. Double vacuumed them. 

So now knowing how forgetful I am with items in the fridge and freezer, I need to figure out how to bag all into one bag/box to organize in the freezer. Need to do a stock-take on the fridge door also.

Aw…. tomato stain !! Tried with sodium percarbonate and didn’t manage to clean off. The second attempt (this pic) with baking soda + liquid detergent did remove a little. 

Soaked these 3x in total. The last with baking soda and vinegar. 

Still have one more tray in the fridge. Sigh…. the cleaning.

Using the fan to cool the drink, before transferring into the container. So troublesome but no choice when I always need to finish work faster.

Each cube is 100g, I put in 824g of tomatoes so I get exactly 8 cubes. As for the tomato juice it’s 80g each. In the bowl is 161g of juice which I will freeze them next time when I empty out this mold. 

Thinking if I should get one more similar mold? Honestly I prefer to seal up with the vacumn sealer but it’s so difficult to suck the air out with liquids inside.
