18th Aug (Mon) 

Desperate to finish the milk quickly so thinking of ways to do so.


@ 4.06pm - my late lunch or early dinner? I hv no idea. As I look at the pizza. Bingo! Bread! I can make bread! 


Out comes the pristine books, the books that I like to flip and flip and daydream of doing them. Wah….like a good wife, good mother who takes good care of the family ๐Ÿ˜‚ but all just daydreaming only


@ 6.22pm - Lazy to do the manual kneading, I turned on the Thermomix. Kitchenaid takes more effort to use, (1) gotta clean the machine and parts longer than Ms Thermie (I often need to clean the machines before using altho I may have cleaned it the last time I use. For Ms Thermie, I used it recently so cleaning will be faster) (2) gotta drag the machine closer as the plug is so far away. 


Since I paid so much for the machine, I better make full use of it. Kneading by machine is definitely faster but not that therapeutic if I wanted to divert my mind elsewhere



@ 7.10pm 

I enjoy making bread coz of the yeasty smell and the manual kneading. Ms Thermie took the workload for me today so I can wash my dishes but she keeps running away ๐Ÿคฃ n had to keep an eye on her just incase she wants to commit suicide. But I hate making bread coz of the time needed for proofing. Now I gotta wait.





19th Aug (Tues) 

Dough weights 794g. I forgot to weigh yesterday, not sure if there’s any difference in weight or not. Purpose of weighing now is so that I can know how much dough to grab for each bread


Dough looking good. Not sure about taste


Punching the dough. Good to do this when I’m angry and feel like punching someone ๐Ÿ˜‚. 


I didn't forget the dough but I had to do housework first. That is the problem I face whenever I wanted to bake bread, always have 1001 other things I to do. By the time I wanted to bake, it was close to prepping dinner. Baked a few to try out this new recipe in between cooking dinner.


Took out approx 35g or maybe lesser/more. Weighing machine was getting a little haywire and anyhow pull out any amount I wanted.

Obviously I didn't use my brain when I did the butter.

Thought I wanted to do the same as the bread that che-che likes.

Che-Che likes hers with butter and sugar. Experimental bread so put chocolate chips for lil’ one.

Coz it melted n dirtied the whole tray ๐Ÿคฃ. Maybe next

round I should put in a muffin tray.

The mini choc chips made it look like a messy porcupine.




Trying them out



Both not bad but my opinion don't matter. It's the two fussy girls' opinions that matters.

I left 4 for them and che-che finished all the butter bread, she left only 1 choc chip for lil' one. I didn't tell her that is with butter topping but she knew.




20th Aug (Wed)


So now I’m trying to put butter inside the dough and outside


Made 12.  So this recipe gives me in total 18 small bread. Looks like I’d have to half the portion the next time or to try out freezing dough instead coz this family of mine always don’t eat / finish what I make (u say if it’s justifiable that I get angry with them most of the time?)


Tried with luncheon meat, chocolate chips and butter


I like it when the shape looks so neat and uniformed. Weigh differs tho ๐Ÿคญ



My butter bread was very oily ๐Ÿคฃ. The muffin cups were greased with butter. Messy and doesn’t make any difference (taste) so will not do this next time.

And it got me thinking if only this book came out long ago, I wouldn’t have wasted the time and money on other bake books. But I must commend that Alex Goh’s recipes are delicious, just too much proofing.
