Bakeout 👩‍🍳 - part 1 of acting busy

6th Nov (Thu)

Lil’ one is about to end her internship and she wants to give thank you gifts to her lovely colleagues. Last year she gifted them too but …. She has so many people to give this year 😅. Anyway she is supposed to bake it herself but she looks like a zombie coming home from work everyday, so I decided to handle everything myself AND THEN SHE GETS THE CREDIT! 


Came home after my class and grocery shopping where I bought more rubbish than what I really went into NTUC for. I have a butter with its best before on 26th Nov but wasn’t going to use that. I will use that for our own bakes. 


Wanted something easy, one dough and can make different flavours. I chose the recipe from YouTube’s @savoreasy account.


@ 3.15pm start work. I know for sure this bake will go into the night with such a late start

when I’m so lazy to bring out the small blender to put on the barely-any-space-left counter top. This can do the job, moreover I used the crunchy biscoff spread so it’s nice to have some bigger pieces of biscuits

@ 4.47pm - darn I’m working too slow. Blame it on the music 😂. What took the longest time was the intro of dry ingredients and folding it. And now folding again.

quality expensive bake. Used my ceremonial matcha powder, okay not exactly the most expensive in the batch of purchase but generally ceremonial is more expensive than the lower duller-coloured baking powder

Using the 6cm scoop. This is the standard ice-cream scoop I bought from NTUC or CS. I got 8 scoops of biscoff and 7 scoops of matcha. I followed the recipe for matcha that called for 330g dough but biscoff I kinda dump the remaining 340++g

@ 5.40pm - last biscoff scoop into this bowl coz no more space for another container in freezer


By 5.55pm : cleaned kitchen and put back some items into the cabinet. Took out the wrappers and boxes ( not sure if I’ll need the boxes for her 2 direct bosses.) and heat sealer. Say I try to declutter my house but I have a few sealers at home. 4 sealers to be exact. Haha!

@ 8.30pm. Put two trays in. I don’t do this all the time, usually prefer to bake one tray at a time. Doing this might end up destroying my bakes and waste my effort and time on the end. BUT I still did it 😬.

While baking, scooping up the chocolate chip cookies with the smallest scoop I own.  I purchased this from US donkey years ago (it wasn’t available in SIN then. And there is no such thing as Taobao). It’s the #40 - 3cm (when I measured with ruler). I think this scoop is available in SIN now. 

Makes 63 small scoops. So cute! 


@ 8.43pm - I didn’t have time to switch the trays in the oven. Poked in and it’s not fully baked. Popped back into the oven again. Decided that I wasn’t going to gift this plain matcha, since I needed to bake another batch the next day I’ll bake matcha again.


@ 8.43pm - now I know how much this batter will ‘spread’ in the oven

@ 9.02pm - wanted to use the biscoff topping but no success. Used the spread instead to create a ‘glue’ to put the biscuit on top of the cookie. I’m so proud of myself. I’ve always wanted to bake a levain cookie and I finally did it. Stingy girl aka lil’ one suggested I should half the biscuit on the top. I’m glad I didn’t listen to her coz this looks so much more presentable. Maybe lil’ one was eyeing on the extra 4 biscuits if I halved them 🤣.

No need to go Nasty Cookie anymore, my Ah-soh cookie looks and smells good. 


@ 9.04pm - trying out the biscoff. Oh man! I love this! Lil’ one says she prefers Nasty cookie which is softer. *smack her bottoms*


I hardly stick to one recipe except for the crunchy chocolate chip cookies, thus always need to experiment the wrappers to use for packing. So I think it’s always good to have wrappers of various sizes. Rubbish collector! 
 

@ 9.50pm - I think this 10cm bag can fit right?

@ 9.58pm. Quite a tight fit actually. Maybe a 11cm or 12cm bag will be just nice. Or maybe I should just bake using a smaller scoop. 


@ 10.36pm. It’s no joke when it’s a OMO. Kitchen was in a mess, I tasked lil’ one to dry and put the dishes back into the cabinet. 我不叫她不会自动帮忙 😤. Now baking with the first tray of chocolate chip cookies. 



Nice and fluffy cookies. Marking this as a  “must keep recipe” Surprisingly it’s not that sweet. 

A short break whilst packing which only took me less than 10mins. Grabbed the boxes in my room where I kept the clear cellophane bags and looked for bigger size bags coz if I were to re-bake the matcha tomorrow, the ‘Effiel tower’ bags will be a tight fit again. Took a few packets out and tried with the machine. Recorded down which is the best settings and time to keep the handle down, wrote on a label and stuck to the packaging cover. This will certainly help me next time.


@ 11.46pm - packing the last ones for the day.

@ 11.49pm - last tray of 23 cookies. Minus 1 later to try each tray of baked cookies. I only baked this for 11mins as the oven is way too hot. 


@ 12.15am - muahaha! So …. the transparent containers that are used for storing the scooped dough in freezer is re-used as an organizer container ✌️
30 packs of chocolate chip cookies. 6 packs of Biscoff for distribution. She only needs to give 14 colleagues, will have 2 packs extra of each for N. Did I keep any for self? No. 


Finally! Time now is 12.43am on 7th Nov (Fri). I’m finally in the cold comfort of the room. Washed and dried the oven trays, did our laundry and towels separately from che-che. Will hang up the towels tomorrow, I’m so so so tired now. If I were to do it later I will end up perspiring again. Sigh….if only this kind of perspiring can make me lose weight I would be a sexy mama by now.  


@ 12.46am - ahhh…… I need to do candy wrappers but I’m so tired to even turn on the laptop. 




7th Nov (Fri)

Had to go over to two places in the morning. Needed a bigger cookie wrap from an office located @ Ubi and needed to get some ingredients from Phoon Huat. Wasted about 1.5hrs of my time only but no choice. 


2.50pm 开工了!I’m really a stubborn idiot 😂, I know that Kitchenaid or Thermomix will whip faster than my old hands but I still go for manual work. 我没事找事做。

@ 4.17pm - finally! The sifting of 500g flour took so bloody long. Folding in the small bowl was a task. Portioned out into 3 again (660g for the double chocolate chips, 330g for matcha and whatever is left for the remaining dough)


This matcha looks so much eye catching. Not sure about taste with sweet and tangy sour but I’m not the one eating it so I don’t care 


Can’t see the red in the dough. I finished the last 8g of matcha. Yup! The ceremonial Uji matcha. Dough with and without anything makes it different in texture. 

@ 4.26pm - another brainless thing I did was to buy a packet of whole hazelnut 🤦🏻‍♀️ instead of the bits n pieces. I had to break them up 🤣, another of me 没事找事做 trying to act busy. Obviously I didn’t do a good job of crushing the hazelnuts coz there were some in big half pieces. 

My attention span is short. I do everything halfway here; halfway there 😂. Only mixed the matcha then decided to scoop into freezer before mixing the chocolate chips cookies

I got 76 scoops of these today. I guess if I had put more hazelnuts I would have more scoops

Wrap this extra dough. Keep to bake another day.


Yesterday che-che asked me to pick her up at Balestier, I couldn’t so asked hubby to help. Today, she asked to eat at NEX. Initially I didn’t want to go but after I realised that I couldn’t do anything at all as I needed to freeze the dough, I went out for a break. 


Returned home and immediately started baking


@ 9. 08pm - Why only 12 mins and it looks charred? Infact I had to extend another 2 mins and lowered temperature a little coz when I put a toothpick in and it didn’t come out clean. 


@ 9.11am - after some touch up the cookie looks weirdly nice. Muahaha! Honestly I have no idea what’s the combination


@ 9.13pm - first batch of the chocolate chip + hazelnut cookies to be baked.


Too many timers. I didn’t know I can rename my timer. This is helpful coz I’m multi-tasking with so many things at once. Baking and scooping doughs to be freezed. If only I had a multi-tier container, there’s so much height space wasted in every container I used. I didn’t have enough space in freezer to put more containers. 




@ 9.38pm - trying this. Matcha is not that bitter. I wasn’t that generous with the white chocolates, I should have put more (can also help to clear stock faster 😂) 


@ 9.44pm - packing them in this huge boring plain bags. Just coz I only needed 6 bags I had to buy new inflated priced bags! 


@ 9.47pm - biased review from me. 掌!When I bit into the cookie I thought it has a slight taste of Nutella. And that gave me an idea, next time I should put some Nutella spread in the dough.

@ 10.34pm - my 2nd last tray. I love how these cookies look. 



@ 11.50pm - the almost  finishing touches - printing labels. Omg! Why is the ink so faded? I like this printer coz it doesn’t use any ink cartridge but a thermal 




Me think if I ever have any business, I will need a room. Coz I had to sweep the cookies aside to make space on the dining table to print my labels at all. And seeing how I organize the cookies on the piano in boxes and paper bags, I think if I ever have a business I will need organization boxes. Ok I’m a daydreamer, if I ever did a hone bsuiness how am I going to cope with housework n all? Maybe I don’t even have any business to worry about that. Haha!


@ 12.22am (8th Nov). Another day of working late into the night, 



Initially wanted to put the two bosses goodies in this box but can’t fit 😂. I had this box assembled and secured with double-sided tape so used it to gift it to N instead. And of course when it’s gifted to a friend, I had to stick my label COZ I WAS THE ONE WHO BAKED ALL.


Organized into respective box and bags. Will do the name tags tomorrow or rather today


Last two labels which will be junked. Always need to print extra just incase.


@ 2.15am 8th Nov - finished shower but hair is so wet. Took time to keep whatever boxes and stuffs back into my walk-in wardrobe. Sat on bed to relax and draft my blog that will take forever to be posted 😬 and then keep adding more and more drafts just coz I want to dump some pics in before I transfer them out into laptop. 

** another blog post will be about the marked up price of food wrappers, heat sealers and printer I use. Will link up another time once that is up. 


The date don’t tally but had to put this collage here. Cards were designed on 8th (Sat) night. Printed and laminated on Sunday morning and everything assembled by evening. All packed for distribution the next day.
